Can anyone recommend someone that sets up Dobros in the UK?

Do you feel up to it yourself? Pop "resophonic guitar setup" into your search engine (Google etc) and you'll find detailed articles on the job, Stewmac, Beard and more. It's not too difficult if you follow the instructions

I'm after someone that can also fit a Fishman pick-up, Beard recomend it should be fitted by an experienced technician. Don't want to damage a nice guitar

I fitted my Beard with the Fishman Nashville Series pickup with no problems. I would recommend you get the new beard spider to accommodate the pickup. It's a great pickup it really brings out the best in the instrument.......... Richard
