Speaker upgrade

Hi, I play a Fender 75 80's valve amp with a 15" speaker.

I hear people talking the whole time about replacing stock speakers in amps (for various reasons, tone, weight, power etc).

I'm keen to get the best out of the amp but dont know what speaker would be a good choice or how much difference it would make?
I think the stock one is an Emminence, I'll check that.
Is a cloth-eared tinnutis sufferer like myself likely to notice the difference?!

Making it lighter would be nice but is less of a priority.

(Also I've heard speakers take a bit of wearing in, is this true?!)
